Beef Salad Vinaigrette (What is a Salad?)

This is an excellent way to use any cooked pot roasted beef you might have on hand. The success of the salad depends on how long you marinate the meat in spicy dressing. It needs at least three to four hours. It is pretty when served with a selection of marinated vegetables, sliced tomatoes, sliced sweet pickles or gherkins, and hard-cooked eggs.

INGREDIENTS

2ccold pot roast of beef, cut julienne
3Tred wine vinegar
½tsalt
dash pepper
2tdijon mustard
½colive oil
2Tcapers, drained and coarsely chopped
1clgarlic, minced or pressed
3Tparsley, finely minced
1-2red onions, sliced
2tomatoes, peeled and sliced
½csweet gherkins
2hard-cooked eggs, sliced

STEPS

  1. Trim pot roast of all fat and gristle, julienne pieces should be ¼-inch by 1½-2 inches.
  2. In small mixing bowl, combine the vinegar, salt, pepper, and mustard. Whisk in the oil mixture is emulsified or well blended. It will separate after standing. Add the capers, garlic, and half the parsley.
  3. Pour dressing over meat, mix carefully. Cover and marinate 3 hrs or more. Serve on shallow platter garnished with tomatoes, gherkins, sliced eggs, onions, and remaining parsley.

TIPS

  • Good served with hot french bread and cold beer.
  • For 8 servings, double the ingredients but use only 5 T vinegar and ¾ cup oil.

What is a Salad?

Normally when we think of salads, we think of lettuce, or potato/macaroni in the specific. In Merriam Webster, salad is defined as:

1. any of various usually cold dishes: such as

a. raw greens (such as lettuce) often combined with other vegetables and toppings and served especially with dressing

b. small pieces of food (such as pasta, meat, fruit, or vegetables) usually mixed with a dressing (such as mayonnaise) or set in gelatin

This salad really typifies the second definition, which also includes macaroni salad, tuna salad, fruit salad, and a Waldorf salad.

The word “salad” derives from salata, similar to insalata, meaning “in salt”, or “in a brine”. This describes the food itself, as dressings usually are based in salt and vinegar.

I am generally a big fan of foods with vinegar, and I’m a big fan of using leftovers, so this recipe is a win to me. Transforming cooked meat sitting in the pyrex container in the fridge into a different and tasty meal (without the microwave) is a gift to your family. The vinegar and capers seep into the meat as it warms to room temperature.

The recipe almost says it, but definitely try the marinated meat in a sandwich as well.
