The flavors of salted sunflower nuts, vanilla ice cream, and honey blend to make an appealing, simple to make, dessert.

INGREDIENTS
| 1 | pt | vanilla ice cream |
| ½ | c | salted sunflower nuts |
| ½ | c | honey |
STEPS
- Scoop ice cream into 4 balls, using ½ cup ice cream for each.
- Roll balls in sunflower nuts. Hold in freezer until ready to serve.
- Place ice cream balls into seving dish. Drizzle each with 2 T honey to serve.
TIPS
- Coat balls of ice cream with sunflower nuts and keep in freezer for a last minute dessert.
- Good served with coffee or beverage of your choice.
My Notes
This is a great example of an easy “pantry” dessert that is a bit unusual. The flavors of sweetness from the ice cream and honey contrast nicely with the saltiness of the sunflower seeds. The presentation with the individual dessert dishes is just so midcentury it hurts. Maybe this would be a good dessert for watching the world series? Take me out to the ball game…
Honestly, this is very similar to a common dessert at Greek/Mediterranean restaurants: greek frozen yogurt with honey drizzled on top. I’d honestly recommend substituting the ice cream here for frozen yogurt, since the sweetness can be a bit overwhelming when you have both the honey and the vanilla ice cream.
Here is my recipe for homemade frozen yogurt. I have an ice cream maker, so I use that. It requires some forethought, since you need to freeze the container beforehand.
Greek Frozen Yogurt
INGREDIENTS
| 1 | qt | Greek yogurt, full fat |
| ⅓ | c | honey |
| 2 | t | vanilla |
STEPS
- Combine all ingredients in a bowl, mixing thoroughly until well incorporated.
- Add to ice cream maker, churning until a thick but not solid consistency is reached.
- Freeze at least 2 hrs before serving.
