Apple Cheese Custard

Choose tart green apples for this homey apple pudding. Pippin, Gravenstein, or Granny Smith apples all make a success of this dessert. It is tempting when served still warm from the oven.

INGREDIENTS

5lgtart apples, peeled, cored, sliced
1ccottage cheese
¾csugar
1tvanilla
½tcinnamon
2eggs
½chalf-and-half
6whole cardamom pods
whipped cream (optional)

STEPS

  1. Spread apple slices in a well-buttered 2½ quart shallow baking dish (about 2 inches deep).
  2. In blender or food processor combine cottage cheese, sugar, vanilla, cinnamon, eggs, and half-and-half. Whirl or process until smooth. Pour mixture evenly over apples.
  3. Split cardamom pods, removing seeds (you should have about ½ t). Discard pods. Sprinkle seeds evenly over apple mixture.
  4. Bake custard at 350° F for about 1 hr until apples are tender and top is golden brown. Serve warm or at room temperature with whipped cream, if you wish.

My Notes

Who knew you could make a custard out of cottage cheese? This dish is basically apple pie without the crust, so if you’re craving that homey feeling without the all of the calories (or one of your guests is gluten-free) this is an easy way to make it work.

This recipe seems like you wouldn’t have to use a blender or food processor (I hate the extra cleaning myself), but you really need it to make the texture appropriately silky and smooth.

The cardamom is an unexpected, but extremely pleasant addition.

This recipe (and any recipe with sliced, peeled, and cored apples) becomes infinitely easier with an apple slicing/peeling/coring machine.

It’s a lot of fun for kids to operate, and I loved eating the long, snake-y peels that would come off the apples. The device suctions to your counter top, you spear the apple on the tines, and you rotate away. The only trouble with these guys is making sure the apples you have are appropriately sized for your peeler; if they are too big, it will have trouble getting all the peels off at the top and bottom.
